Kids in the Kitchen: Eggplant Parmesan

The title of the post should read "Family in the Kitchen: Eggplant Parmesan." Everyone pitched in to help get dinner on the table a little quicker. 

After E sliced the peeled eggplants, M sprinkled salt on the pieces. 

While we waited for the eggplant pieces to sit in the salt, J helped beat the eggs.

Meanwhile K assisted by grating the mozzarella cheese.

 After rinsing the eggplant, Mom dipped the slices in first the eggs and then breadcrumbs & parmesan . When the slices had browned in light olive oil, Dad would place them in the baking dish. Some tomato sauce topped with mozzarella cheese (& more parmesan cheese) completed our masterpiece.  Go Team!
